Giving Thanks

Below is a photo of the heart from the bison I field-harvested on Friday.

We are so grateful for each bison we field-harvest here on the ranch.

I touch each bison’s face and thank it after I kill it.

Probably sounds crazy to some folks, but when you live this close to nature and your food, it makes sense, and we just believe in our process so much.

Taking a photo of the bison’s heart in fresh snow is one of my favorite ways to honor the bison.

I think it’s just a powerful image.

As we say here, “Eat with your eyes wide open.”

Looking at the still-warm heart of a freshly killed bison in the snow in January really drives home that point.

Friday’s bison was big and strong and beautiful.

As was its heart.
